In late 2017 I spent a week in Samoa, the first half of the week spent shooting coconut farmers on Savai'i with Fairtrade and the second half of the week exploring Saleapaga Village and the surrounding area. 

While in Saleapaga we were lucky enough to participate in the traditional Sunday Umu. The Umu is a cooking method similar to the Hangi in that hot rocks are used to cook the food - the major difference with the Umu though is that it is an above ground method. It was a pleasure spending time with the men as they prepared the food and tended to the fire - the most interesting part was probably seeing coconut cream being made from scratch.
